#163: Vegan chocolate chip cookies September 15, 2011

I adore chocolate chip cookies.  Tollhouse cookies are one of the first things I learned to bake as a child.  They are pure comfort food to me.  My Dad made really good ones.  In fact, the night before he died, he baked some for us.

Making vegan chocolate chip cookies was pretty easy.  I used organic sugar, Earth Balance instead of butter, and flaxseed meal and water instead of eggs.  I used whole wheat flour to make them healthier and of course, vegan chocolate chips.  They were GOOD!  Both my husband and son liked them.  And the best thing?  You can go to town on the cookie dough!  No raw eggs to worry about.  🙂
